WOW!
What a beer!!

The trippel is very well balanced and can really pack a punch in the summer heat ie. summer arts fest.

Tried the Quad at the Moon on Saturday. I really enjoyed it. The little sweet/spicy thing going on at the end was awesome. I also got several other people at the bar to purchase a pint. The only person I actually knew was my brother in law, so the story of hospitality saints must have some appeal.

We were looking more for an old world flavor in the porter. Assertive malt flavor with a liberal dosing of hops brewed to the high end of the style. Not that we get too worried about style but it will be close to 6% a.b.v. when it's finished.

It's not a sour beer although we are kicking around plans for one. The big problem isn't producing one as much as packaging it. Once we put a sour beer in a keg, sour beer is all that will come out of that keg.

When we finally make the leap we may have to bottle half or more of the run. We do have a handful of bunged kegs we could reserve for that purpose.

Thanks to everyone that attended the release party. Special thanks to Kevin, Karen and crew for the unique and entertaining food paired masterfully with the beer. I had the Flat Bread with Serrano ham, Quince, and Manchego cheese. The nutty sweetness of the Quince with the salty spice of the ham and the rich creamy cheese was a perfect complement to the bold malty sweetness of the beer. The Brothers also shared the crispy bone marrow on toasted bread. While this dish may seem strange bone marrow is a rich source of nutrients and very tasty. Wild dogs wouldn’t have developed those huge jaw muscles to crack open bones if there wasn’t something good in there. The sweet fatty goodness of the marrow stood up well to the bold flavors of the beer.

The beer was served in long stemmed wine glasses which allowed it to warm to a good drinking temperature in short order. This beer is best drank around 50 degrees. Cold it’s just too easy to drink and you’ll miss much of the complex flavor that emerges as it warms. That, and the fact it’s quite strong and you might be tempted to drink it too fast when cold.

The place was packed shortly after the party began and was standing room only for about an hour and half. A short beer line formed right away and the entire keg was consumed before 9 p.m. Look for another event heralding the release of the Tripel. I suggested spicy spring rolls might pair up with the hoppy dryness of the Tripel. We’ll see what Kevin comes up with.

I've got 5 gals of the control beer with a Lambic Blend pitched in the secondary with some honey and oak cubes. I plan letting the bugs work for about 8 weeks then adding some pepper and coriander for a week before bottling.

St. Meinrad is the patron saint of Hospitality. The story goes he allowed a few weary travelers inside late one night, it was stormy, cold, and nasty out. He feed them, gave them a warm place to stay for the night and after he went to sleep, the robbed him blind then killed him.

This beer is nourishment, warming, and if you dont watch out, it will knock you out! It clocks in at 10% ABV but seems no where near that strong.

I have 7.5 gallons going in the brink, with a little vinyl hose on for a blowoff.

and now the yeast has crawled all the way up the keg and out the tube.

I can't imagine what's up in GI.

Yes, you are right! We did happen upon a very nice pitch of Westmalle from our very generous friends at Empyrean.

Very big thanks to them! And to our guest brewer and all of his notes and hand calcualtions Brendan.

The Fermentation according to an eye witness is "insanely vigorous". It should be another excellent addition to the cellar.

Don't forget that Westmalle strain... Possibly wrangled from the chapel d'empyrean?

I am curious how the ferment is going. My guess...

Well, I guess maybe the Saison has yet to be poured. I just heard that the SAF was cancelled for Friday due to some pretty nasty storms. Hope everybody is all right.

I think Batch 4 is all that's anywhere except Thunderhead may have some batch 2. Only 1 keg of the Black Gold remains unspoken for. Maybe it will go to Yia Yia's. Very nice beer. Try to catch it at the German fest at Bread and Cup.

Hi Lash,

Kearney? I don't know if any is pouring in Lincoln now...the stuff we had at Bread & Cup when you were there was batch #2. Batch 4 hasn't made its way here yet, that I know of. I'm sure Batch 1 is long gone, I think that was all sold in GI & Kearney...maybe Trevor has some of it stashed. I've got 3 and 4 in my basement!

Cheers

Of course, Steve, we couldn't quit our day jobs. We'd have to file for unemployment!

None of the brewers should quit there day jobs yet, but a beer that is certainly true to the Belgium style to which it was brewed in the center of Nebraska (so far away from Europe) is a fine complement to may of the fairs offered at the Bread and Cup. I also enjoyed it a little warmer than offered. Thanks Boys and keep up the good work!

Sorry I couldn't make it to the tasting, but I had a pint at YiaYia's and enjoyed it!
touches of caramel, well attenuated. No harsh phenolics.

Frank Zappa was one of the most creative and innovative artists of our time. Being the “elder monk” of the group I remember listening to “Freak Out” on my 8-Track player while driving around in my 69 Mustang. Frank discovered and produced many other slightly off center artists in addition to his own unique style. His honesty and blunt social commentary is sorely missing from today’s music.
