The latest offering from the Modern Monks is our version of a Belgian Style Trippel. Pale gold with an intense honey aroma from the pale malt fused with subtle and spicy hop aroma. A healthy dose of noble Spalter Select hops late in the boil infuses the golden brew with a gentle herbal character that complements the bittering hops and sweetness of the malt. Many early tasters have compared the Trippel to the Brother’s Cup. While the Brothers didn’t set out to make an “Imperial” version of our flagship brew we readily acknowledge that one great beer might taste much like another. We see the Trippel as the perfect segue to the lighter beers of summer as we have two batches of our Brother’s Cup in the tanks awaiting the final magic of the yeast.

As with every new beer we produce we partner up with a local restaurant and pair their product and ours in unique and delicious ways. The Modern Monks Olde Porter is no exception. With the help of Bread and Cup we will once again offer up our forbidden ales to be contemplated. The festivities start this Saturday May 16th at noon. The menu will be one that highlights both food and beer.
Smoky Tomato Soup $4–Smoke flavor comes from locally raised Roma tomatoes that have been hickory smoked over a low heat. Day old sourdough adds a little body and acidity.
Sweet Chipotle BBQ Beef Sandwich $7--Beef round slow roasted till fork tender, then mixed with our house made Sweet Chipotle BBQ sauce. Served on half ciabatta loaf.
Chocolate Bacon $4–Hickory smoked bacon dipped in 64% dark chocolate, then coated with toasted coconut and served with a dollop of crème fraiche. The bitter (chocolate), sweet (toasted coconut), salty (bacon) and sour (crème fraiche) fit the dark character of the beer.

The latest creation of the Modern Monks is here and ready to be contemplated. Olde Monk Porter.
Olde Monk Porter, a very dark brown masterpiece that displays a roastiness which yields to a slightly nutty chocolate character that beckons to be tried again. Like the old monk who is steadfast and stubborn in his ways this ale refuses to let go of its roast character long after the swallow, and again like the old monk who has a soft side and a kind sweetness to his soul this beer will allow the various high quality malts dance delightfully on your palate.
As you sip and ponder this beer sit back and wonder about the roast character as there is NO roast malt or black malt used. Only the secrets that the old monks used were put into the handcrafting of this ale.

We made it back into the brewery on the 15th of March and got to work creating a batch of our Old Porter. Dave Hoage was kind enough to lend us a hand and with his help we were in and out of there in 5.5 hours. A record for us!
